Lazy Chicken Quesadillas

Serves 2 • Serving Size: 2 quesadillas • Makes 4 quesadillas (4 tortillas, 1 1/3 cups mixture, and 1/2 cup topping)

1/2 cup gluten-free picante sauce

1/2 cup diced cooked chicken breast

1 ounce shredded part-skim mozzarella

1/4 teaspoon ground cumin

1 teaspoon canola oil

Cooking spray

4 6-inch soft corn tortillas (read labels)

1/4 cup diced tomatoes

1/4 cup fat-free sour cream (read labels)

1. Place the picante sauce in a fine mesh sieve and drain well, discarding about 1 tablespoon of the liquid. Combine the chicken, picante sauce, cheese, and cumin in a medium bowl, toss lightly until well blended.

2. Heat oil in a large nonstick skillet over medium heat. Lightly coat one side of each tortilla with cooking spray and place sprayed side down in skillet. Spoon equal amounts of the mixture on top of each tortilla (about 1/3 cup each). Using a fork, lightly spread chicken mixture evenly over each tortilla. Cook 2 minutes, fold over, and press down with a fork to adhere. Then cook 2 minutes on each side or until golden and cheese has melted.

3. Top each quesadilla with 1 tablespoon diced tomatoes and 1 tablespoon sour cream.

Cook’s Tip

You can double this recipe. Keep the first 4 quesadillas warm in a preheated 200°F oven while preparing the remaining 4 quesadillas.
